Ginger has been used for its health benefits for many centuries all over the world. It has various medicinal and culinary uses. This root spice grows under ground, can be used either in dry or the freshest form. The flavour of this recipe is quite different. This recipe has the sweetness from the Brown sugar, heat quotient from the red chillies and spicy flavour of ginger, the unique blend of various flavours gives this recipe different taste. Ginger being the dominant flavour, use liberal amount of it.
Ginger storage: Pieces of the root can be cleaned, peeled, sliced, and ground to a paste with salt and turmeric and can be stored in air tight jars and can be refrigerated for about 3 weeks. Available in all most all grocery stores and super markets
Health benefits of Ginger: Health benefits of ginger are various . It helps with digestive ailments. It can help digest fatty foods and break down proteins. It is excellent for reducing gas, relieve nausea, and can be effective in treating morning sickness as well as motion sickness.
Chicken - 1 lb boneless
Corn flour - 2 tbsp
All purpose flour - 1 tbsp
Soy sauce - 2 tbsp
Vinegar - 1 tbsp
Red chilli flakes- 1 tsp
Red chillies whole - 4-5 ,adjust according to taste
Ginger - 1 tbsp finely ground for marination
1 tbsp finely grated for frying
Ginger- Julienned for garnish
Brown sugar - 2 tbsp
Ketchup - 1 tbsp
Red food colour - a pinch
Take the chicken in a bowl and add 1 tbsp corn flour, all purpose flour, food colour, salt, pepper, grated ginger, red chilli flakes soy sauce, vinegar, egg mix thoroughly and keep it aside for half an hour.
Deep fry the marinated chicken pieces in oil and keep it aside.
In a small bowl make the sauce by mixing 1/2 tsp vinegar, ketchup and brown sugar , mix well and keep it aside.
In a wok , add 2 tbsp of oil and add whole red chillies, grated ginger and fry. Add the fried chicken pieces and stir fry. Add the brown sugar mixture and fry. ( after adding brown sugar sauce chicken gets sticky and quickly burn, keep a watch) Garnish with julianned ginger slices and serve.
