Feta cheese salad


Think of Feta, reminds us of greek salad. The mere mention of the word "cheese" triggers the tastebuds.  There are different types of cheeses available in the market. Hard and soft, thick and creamy etc.. This recipe is made with feta cheese. Feta cheese is traditionally made with goat's milk or sheep's milk which is low in saturated fats. It is white in colour and has the distinct soft and crumbly texture. The entire process of making feta cheese takes a long time. It is kept for curing in salt water. If you want to purchase feta cheese from the store, it comes in blocks, soaked in water. I find feta cheese to be very salty and hence totally avoided using extra salt in the recipe. If you are watching your salt intake, I would suggest you to totally avoid feta cheese and find some substitutes


Feta cheese salad
Ingredients:
Feta cheese - 3" block cut in cubes
Green pepper - 1 cut in cubes
Red onion - 1 cut in cubes
Cucumber - 1/2 cut in cubes
Tomatoes - 1 deseeded and cut in cubes, cherry tomatoes preferred.
Black olives - 1 tbsp ( optional)
olive oil - 1 tbsp
pepper - 1/4 tsp
Lemon juice - 1/2 tsp

Method:
Combine all the ingredients, mix well and serve.

Tip: Drain the water off from the cheese container and  rinse with fresh cold water before use.
