Wild rice and Chicken soup

Wild rice blend is a combination wild rice, brown rice, country rice etc. Each variety of rice has different colour, size, texture and taste. It's a healthy diet for those who watch their weight. It is full of fibre with all the nutrients intact. Wild rice is not actually rice but comes from an aquatic plant. This rice blend takes longer cooking time than usual.   The classic combination of  nutty, crunchy, chewy textures  from different kinds of rice brings out the unique flavour in the soup. I like my soup to be in clear broth especially in cold winters. Vegetarians can add soya chunks and substitute chicken stock with vegetable stock.




Wild rice and chicken soup
Ingredients:
Wild rice blend - 1/2 cup
Chicken - 1/4 lb
Carrots - 1/4 cup chopped
Onion - 1 small chopped
Celery - 1/4 cup chopped
Garlic - 1 pod finely chopped
Salt
Olive oil - 1 tbsp
Chicken stock - 4 cups
Italian seasoning - 1/2 tsp
Green onion - chopped for garnish

Method:
Wash the wild rice and keep it aside.
In a pot pour oil add onions, garlic and saute till the onions are translucent, add chicken pieces and fry till it slightly brown in colour. Add carrots, celery and fry for a min, add the salt and seasoning, mix well . Add the chicken stock and wild rice bring it to boil on medium high low until the chicken , vegetables are cooked through and the rice hull breaks open . Serve steaming hot.

Tip: To the make the soup in thick consistency add corn starch.  To make it rich and creamy add 2 cups of heavy cream.
