Tomato cucumber salad

Here is a beautiful side dish /salad.  The secret to make this recipe is to use the freshest of ingredients. It is a good way to add fruits and vegetables to your diet.  You can have it almost everyday with out any risk.  For the first time,  I had this for the first time at a srilankan restuarant, and liked the way they made it. It goes well with any dish.

Tomatoes - 2  chopped
Cucumber  -1 chopped (with skin is better, it adds colour and fibre)
Onions - 1 chopped ( you can also use the red onion)
Carrots - grated (optional)
Green chillies - 1 finely chopped
Coriander - few sprigs finely chopped
salt to taste
pepper- a sprinkle
lemon juice - 1 tsp or vinegar
peanuts (optional)- roasted and chopped, if you want to add protein to your diet.

Mix all the above ingredients and enjoy!
