Cabbage fry

Here is a good way to have cabbage.  When I make this recipe, I don't normally over cook the ingredients. I want to keep it raw and crispy, so it can retain its nutrients and colour.  It is almost like a salad, keeping its nutrients intact.   Can be used like a side dish . For those who don't like to eat raw, You can  also make variation in this recipe by slightly browning the cabbage and adding the egg and fry , goes well with roti.

Here is the recipe....
Cabbage - 1 cup finely chopped
Onions - 1 small finely chopped
Green chillies- 2 finely chooped
mustard seeds , cumin - 1/4 tsp for seasoning
Curry leaves - 1 sprig
Coconut - fresh, grated finely (optional, if you don't want to add too many calories)
oil- 1 tsp
Salt to taste.


Method:
Start with seasoning, Add mustard and cumin to the oil when it splatters, add onions and green chillies and curry leaves. when the onions are fried and  become translucent, add the cabbage, salt and mix it all together, and add the coconut and mix and quickly remove from the stove to stop over cooking. It shouldn't take more than a min after you add the cabbage.
