Meat loaf

This is an old fashioned meat loaf recipe.   This recipe is very popular among the carribean population. Yet another classic dish for the meat lovers.  Eggs and breadcrumbs helps it to bind  together. The spices adds the flavour.  It is  hit among the kids, because of the sweet toppings used. It doesn't have to taste the same everytime. Change the herbs and spices and the toppings and it turns out to be a totally new flavoured meat loaf. For healthy version use only extra lean ground beef or trim the fat off the meat and make your own minced beef.



Ingredients:
1 lb  extra lean ground beef
2 eggs
1 onion, chopped
1 garlic pod
1/2 cup milk
1/2 cup bread crumbs
salt and pepper to taste
1/2 tsp of your favorite dried herbs like  tyme, parsley.... etc
1 tsp brown sugar
2 tbsp mustard
2 tbsp ketchup


  Method:
 Preheat oven to 350 degrees F (175 degrees C).
 In a blender add eggs, milk, onion , garlic and blend it few seconds.
Take a bowl put beef in it and add the blended mixture, add bread crumbs, salt, pepper, and seasoning ( crush the dry seasoning in the hand and add) and mix it well.
Place it in a lightly greased 5x9 inch loaf pan or baking dish.
In a separate small bowl, combine brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
Bake at 350 degrees F (175 degrees C) for 1 hour.

Variation:  ketchup and mustard can be substituted for  other sauces like barbeque sauce, chipotle sauce  for heat etc. To serve the children, make it a cheesy topping, by adding grated cheese on top.

Serving suggestions:   I served it with glazed carrots and mashed potato.   Add your favourite steamed/ stir fried vegetables on the side.  Serve mashed sweet potato instead, for a change.
