Cabbage coleslaw - Hawaiian salad

This luscious Cabbage coleslaw- Hawaiian salad is refreshing during the hot summer months. The fresh taste of the sweet pineapple, the lovely colours and textures of the red cabbage, orange carrots, and the taste of coconut brings the tropical flair . Since there is no cooking or steaming involved,  it keeps the  nutritional value of the fresh fruits and vegetables used in this recipe.  Hence, it doesn't destroy the essential nutrients. I used Dole's classic ready made coleslaw with shredded white cabbage, red cabbage and carrots. If you have time to shred the vegetables, go ahead and chop your own .  You can substitute sour cream with yogurt, if you are concious of your weight and totally avoid sugar, or  you can substitute it with splenda.



Serving kids: Cabbage is delicious, healthy, power packed vegetable which most of our North American kids dislike. Nutrients are important and critical for the growth and development of children. Cabbage is rich in Vitamins, fibre and has many health benefits. This recipe is a healthy way to introduce this vegetable to our kids in its natural form, just as the mother nature intended for us. After enjoying this recipe your kids will never call it as a boring vegetable.


Ingredients:
Cabbage - 1 cup shredded
Carrots -  1/4 cup Julienned
Red cabbage - 1/4 cup Shredded
Coconut - 1/4 cup dry, sweetened shredded
Pineapple -  1/2 cup chunks or crushed ( tin or fresh)
Mayonnaise - 1/4 cup
Sour cream / yogurt - 1/4 cup
Sugar - 1 tsp
 
Method:
Combine  shredded cabbages, carrots, coconut in a bowl.  In mixing bowl blend sour cream, mayonnaise, sugar,  Pour over cabbage. toss lightly.  Drain the pineapple chunks from the tin and add it to the cabbage. Combine all ingredients and toss. Chill before serving.
