Mutton fry


I learnt this recipe from my sister who passed away. Whenever we happened to visit their place, my sister and bro-in-law used to make a big feast. They used to cut a lamb in our honour. It's a kind of tradition runs in our family, for the special guests. My sister used to make all different recipes with different parts of the lamb, like paya with the legs, Gongura with boti, and mutton fry with the meat. Here is the mutton fry recipe...


Mutton fry
Ingredients:
Mutton - 1lb cleaned and cut in peices
chilli pwd - 1 tsp
Daniya pwd - 1 tsp
Ginger garlic paste - 1 tsp
Salt
Bhojwar masala - 1 tbsp
Oil



Method:
Take the meat in the pressure cooker add chilli pwd, ginger garlic paste, daniya pwd, salt and 1/4 cup water and pressure cook for 1 or 2 whistles( depending on the meat toughness) cook until it is tender.

Pour oil in a large frying pan and transfer the cooked meat to the pan and put it on medium flame. Let all the water evaporate. Keep frying, until all the pieces are slightly browned. Add bhojwar masala and fry more.

Serve hot with rice.

Tip: Bhojwar masala is a combination of different spices. You get the whole spices in a pack, dry roast them and make a powder or you can buy ready made mix from store.

Bhojwar masala consists of the following ingredients:
Coriander (Dhania)
Bay Leaves (Tej Patta)
Red Chilli (Mirchi) Powder
Clove (Laung Pata)
Black Caraway (Kalaunji)
Salt
Stone Flower (Dagi Phool)
Poppy Seeds (Khaskhas)
Phootana Dal
Groundnut(Palli)
Khopra (coconut)
Cumin (Jeera)
Sesame (Til)
Kabab Chini
Fenugreek seeds (Methi)
Mustard (Rai).

  2. Yeah, it sure is lot of ingredients in Bhojwar masala, but you only need little in this recipe.
