Alu puttu

There's a saying in Hindi" Alu aur Indian kahi bhi mil jathe hai". Meaning: potatoes and Indians can be found anywhere in the world. Every country has its own version of mashed potato recipes. This Indian version of mashed potatoes are best taken with dosa, poori, or roti.
Alu Puttu
Ingredients:
Potatoes - 2 big, boiled , peeled and mashed
Green peas - 2 tbsp
Green chillies - 3 chopped
Onions - 2 chopped
Curry leaves- 1 sprig
Mustard seeds - 1/4 tsp
Ginger pwd - a pinch
Turmeric - a pinch
Salt
Oil- 2 tbsp
Coriander - for garnish
Method:
Pour oil in a pan add mustard seeds and wait till it crackles, add green chillies, curry leaves and onions one after the other and fry until onions gets translucent. add salt, turmeric, add ginger pwd. Add the green peas and fry for a min . Add the mashed potatoes and mix well. Add coriander just before taking it off the stove. It will add flavours and retain the colour. Serve hot.

Tip:  As a  special added touch, I added pinch of sambar pwd in this recipe. It gives the unique asafoetida flavour. The left overs can be used to recreate a new dish. Alu bonda, and Alu paranta.
