Egg fried rice



Ingredients:
Rice - 1 cup washed, soaked and cooked
Garam  masala whole - 1 tbsp -  includes ,cardamom, black jeera, cinnamon stick, bay leaf, cloves
Onions - 1 sliced
Green chillies - 3 slit in the middle
Curry leaves - 1 sprig
Mint - 1 tbsp chopped
Coriander - 1 tbsp chopped
Eggs - 2
Oil - 2 tbsp
Salt
Pepper



Method:
Pour oil in a pan and add the whole Garam masalas, fry for a min.  Add sliced onions, green chillies, curry leaves, fry until the onions turn translucent.   Add mint and coriander leaves and fry .  Move the onions and leaves to the side of the pan making the oil to come to one side.  In the oil break 2 eggs, cover the pan and cook for a min.  Now add  cooked rice,salt and  pepper  and mix it altogether.
Cover the pan and put it on simmer for about 5 mins and serve.
