Lentil soup with spinach. Goes well with Rice or Roti. Dal is like a comfort food for us. I am not bragging but, I can make 8-10 variations in just Dal alone, using Different kinds of lentils. One of my Gujarati friend's vegetarian diet consists of 2 or 3 dals each day. I learned some from her. Ofcourse, this is my Mom's recipe.
Ingredients:
Dal - Tur dal cooked 1 cup.
Spinach - 1 cup washed and chopped
Green chillies- 2
Salt
Red chilli pwd - 1/2 tsp
Tomatoes - 2 chopped(optional) as some people don't prefer mixing tomatoes with spinach. But it tastes good with tomatoes.
Seasoning:
Mustard seeds - 1/4 tsp
Cumin - 1/4 tsp
fenugreek just 4-5 seeds
Red chillies - 2/3
Curry leaves
Garlic - finely chopped.
Onions - 1medium sized chopped.
Oil
Method:
Start with the seasoning. Pour oil in a pan add the seasoning ingredients one by one. Red chillies, mustard, cumin, fenugreek, garlic, curry leaves, Onions and green chillies and fry for some time. Add tomatoes and let cook. Now add the salt and redchilli powder. Add the cooked dal, mix it well and allow the spices to blend it together and now add the Spinach. cook for few more mins and its ready to eat!
Tip: you can add red chilli pwd according to your taste, because we are already adding fresh green chillies and red chillies whole, in the seasoning. It adds lot of heat, so watch out.
