Carrot raisin salad

This is a very refreshing summer salad. The carrots and the raisins  absorb the flavour of orange juice. The hint of fresh ginger gives a special knotch to the salad. Use the food processor if you have hard time grating the carrots. Use the  cold,refrigerated carrots, to  serve it immediately.
Ingredients:
Carrots -  4 grated
Freshly squeezed orange juice - 1 cup
Lemon juice - 1 tsp
Fresh ginger - 1 inch grated
Honey or Sugar  - 1tbsp
Raisins - 2 tbsp

Method:
Soak the raisins in orange juice for 1 hr. Add sugar, ginger mix it well and add the grated carrots, combine to mix it well. serve chilled. Garnish with a slice of orange.
