Red cabbage slaw

What a beautiful colour! This dish adds beauty and colour to your table setting. Red cabbage or purple cabbage is generally  dark purple in colour. It gets its colour from the plant pigment called "anthocyanins".These colours help lower the risk of some cancers. Red Cabbage is very low in Saturated Fat and Cholesterol. It is also a good source of Thiamin, Riboflavin, Folate, Calcium, Iron and Magnesium, and a very good source of Dietary Fiber, Vitamin A, C, K, B6, Potassium and Manganese. Red cabbage has twice the amount of vitamin C than green cabbage. It also has the anti-inflammatory properties.

Red cabbage has the similar taste to green cabbage. There are various recipes, but coleslaw is quite popular. It changes it's colour to blue when cooked. It is best eaten raw in the form of salad than the cooked version.There are various types of vegetables in the cabbage family , broccoli, brussel sprouts, collards, cauliflower etc.

Looks like red cabbage has a twin sister, Radicchio. When you go the market to buy red cabbage, don't get confused with radicchio. It has the same colour, It looks like a small head of red lettuce. It is a mildly bitter tasting leafy vegetable in the chicory family. Radicchio is very popular in Italy. It is eaten raw with just a bit of olive oil and salt, as well as mixed into a variety of salads.

I can make two variations in this recipe. Here I am giving the two recipes.  The pics shown are the first recipe.


Red cabbage slaw recipe 1:


Ingredients:
Red cabbage - 1 cup shredded
Thick yogurt - 2 tbsp
Garlic powder - 1/4 tsp
Salt

Method:
Take yogurt in a cup and stir it with salt, garlic powder add it in the shredded cabbage and toss it all up.


Red cabbage slaw recipe 2:

Ingredients:
Red cabbage - 1 cup shredded
Poppyseeds - 1 tsp
Sour cream - 1 tbsp
Mayonaise - 1 tbsp
Sugar - 1 tsp
lemon juice - 1/2 tsp
salt and pepper - a pinch

Method:
Take sour cream, mayonaise, sugar, lemon juice, salt, pepper in a bowl and stir it. Add it in the shredded cabbage and toss it all up, sprinkle the poppy seeds on top.
