Quesadilla

This Mexican delight is sure to be a hit among kids, and teenagers.  Chipotle sauce brings that unique flavour in this recipe. The taste is  kind of peppery, use it with caution,when serving kids or you can substitute it with Barbeque sauce.


Ingredients:

1 tbsp vegetable oil
1 onion, sliced
3  sliced mushroom
1 sweet  red and green peppers, sliced
 salt
 pepper - according to taste
boiled/ roasted and shredded chicken pieces 1/2 cup
1 cup shredded Monterey jack cheese
green onions, finely chopped 2 tbsp
Chipotle sauce 2 tbsp
2 large flour tortillas
cooking oil  spray


Method:

In large skillet, heat oil over medium-high heat; fry onion, mushrooms, red and green peppesr, salt and pepper until liquid is evaporated, about 5 minutes. Scrape into bowl.

Meanwhile, take shredded chicken into separate bowl. Add  chipotle sauce and stir to coat. Set out cheese,  and green onions in separate bowls.

 You can either prefer to do it on a pan or  a grill or an oven.   use the cooking spray oil on the tortilla which is facing down.  Place the tortillas and add the filling  first the cheese layer, vegetable layer, chicken,  chipotle / barbeque sauce and the green onions and add the remaining cheese on top. Place another tortilla on top and spray oil and  bake.  Bake in 400°F (200°C) oven, turning once, until golden and cheese is melted, 15 minutes. Cut into halves or quarters and serve.
