Carrots are full of goodness. They are so rich in Beta- carotene that just one reasonable sized carrot provides enough for your body to convert into a whole day's dose of Vitamin A . It is known that, consumption of carrots can reduce the risk of cancer. It is good for your eyes and skin.
When ever I get some fresh carrots, I make this at home. Use it like a salad or a side dish. It is just as good and refreshing. You can also grate the carrots, I julienned it, because it gives equal length and perfect for presentation.
Ingredients:
Fresh carrots -4 grated or Julienned
Coriander leaves - 1tbsp
Mustard seeds and jeera - 1/4 tsp
Fresh curry leaves - 1 sprig
oil - 1/2 tsp
lemon juice - 1 tsp
sesame seeds - 1/2 tsp
Salt to taste
Red chillies/ green chillies - 1 crushed/chopped ( adjust the heat according to taste)
Method:
In a separate bowl keep the grated carrots ready. In a pan pour oil and fry the mustard seeds, jeera, green/ red chillies, curry leaves, sesame seeds and pour the seasoning in the carrot bowl and toss. Add lime juice,salt and toss again. Garnish with fresh coriander leaves.
Tip: Practically, carrots doesn't require any cooking at all in this recipe. All we are doing here, is adding the seasoning to make it taste better.
